Native Australia

From 13 January, we present a new menu shaped by Country β€” an exploration of Australia’s native ingredients through the lens of modern fine dining.

This homage celebrates the depth and diversity of our landscape: the warmth of pepperberry, the brightness of lemon aspen and sunrise lime, the richness of macadamia and bush tomato, the subtle smokiness of paperbark, and the delicate sweetness of spanner crab.

Storytelling has always guided the plate. This menu continues that philosophy, honouring native flavours while pushing them forward in unexpected ways.

It is a conversation with the land. And an invitation to experience Australia, redefined.
